Depending on the season, they carefully select the best sweet potato varieties and production regions to ensure peak flavor. Their secret syrup, made from a special blend of sugar and starch syrup, creates a delightful contrast: crisp and fragrant on the outside, soft and moist on the inside. Simple yet irresistibly comforting, each bite brings a smile.The owner explains that he “consults with the potatoes” as he fries them, adjusting the heat according to the potato’s moisture and the day’s temperature. They fry the potatoes in small batches based on demand to ensure they are always served hot and freshly made.The shop offers two varieties: the glossy, amber-colored daigaku-imo coated in sweet syrup, and kiriage, a lighter, crispier style.
