A Surprising Ramen Shop Born from a Traditional Ningyo-yaki Confectionery.This unique ramen restaurant is run by a long-established ningyo-yaki (traditional Japanese sponge cake) shop, bringing their deep expertise in flour and ingredients into an unexpected new challenge.The signature features are the additive-free soy sauce-based broth and homemade noodles. The noodles are straight, low-hydration noodles made with premium Hokkaido wheat varieties like Haruyokoi and Yumechikara, offering both smooth texture and rich wheat flavor.The broth is a complex blend of six types of dashi, including chicken, pork, shellfish, and crustaceans, while multiple kinds of soy sauce and salt are blended for depth. Even the chashu (braised pork) and menma (seasoned bamboo shoots) are lovingly prepared in-house.It’s an unexpected place where the world of traditional sweets meets serious ramen craftsmanship — and yes, you can still pick up some freshly made ningyo-yaki on your way out!
